Feeling a little green from the all the St. Patrick’s Day festivities? Boost your energy (and possibly soothe your tummy!) with this creamy avocado smoothie.

Avocados are full of healthy fats; vitamins A, D, E, and K; B vitamins; and soluble and insoluble fibre. They are also a good source of plant-based protein. One avocado has 18 essential amino acids and 4 g of protein.

Brazilian Avocado Smoothie
2 cups (500 mL) unsweetened almond milk
1 avocado, peeled and chopped
1 Tbsp (15 mL) lemon juice
1 tsp (5 mL) natural vanilla extract
3 Tbsp (45 mL) wildflower honey
4 ice cubes

Place all ingredients in blender and whirl until smooth. Taste and add more honey, if you wish.

Serves 2.

Each serving contains: 247 calories; 2 g protein; 12 g total fat (2 g sat. fat, 0 g trans fat); 36 g carbohydrates; 6 g fibre; 177 mg sodium
